The Coppa Piacentina ODP is an Italian sausage made from pork with a protected designation of origin, typical of the province of Piacenza.
It is made with meat from the neck of the pig. The meats can come from Emilia-Romagna or Lombardy but the processing must take place in the Piacenza area. The finished product, after at least six months of seasoning, has a cylindrical shape and weighs more than 1.5 kg. Its peculiar characteristic is its “sweetness”, which requires a limited percentage of salt and the carefully calibrated use of spices which must not dominate the “perfume” of the cured meat.
It is sold whole or in vacuum-packed slices. Once sliced, the cured meat must be placed in the lower part of the refrigerator, taking care to wrap the cut part in cling film.
